The waters around Thailand are blessed with a cornucopia of seafood and the jewel in the crown is undoubtedly the Andaman Sea. The chefs at Up & Above pay homage to this natural larder in August, creating recipes that showcase the Andaman’s freshest catch.

Seafood lovers can indulge in appetisers such as fritto misto, which includes prawns, calamari, sea bass, and mussels served with lemon and tartar sauce; and the piquant, citrusy burst and crunch of spicy pomelo salad with crispy seafood, red chilli, and coriander.

Premium produce from the Andaman forms the centrepiece of main course dishes inspired by the culinary traditions of the Mediterranean. These delightful seafood offerings include snapper picatta with couscous, harissa, and crispy leeks. Also excellent is sea bass poached in lightly herbed acqua pazza broth with garlic, tomato, celery, basil, lime, and Italian parsley. And those with a hearty appetite will appreciate succulent grilled giant tiger prawns, an Andaman specialty, served with crushed potatoes, broccolini, sun-dried tomato salsa, and lemon butter sauce. Fresh and delicious, this is seafood at its finest.
