Scalini, an award-winning Italian restaurant at Hilton Sukhumvit Bangkok, is launching a dining promotion ‘Seafood in the city’ with imported and local produce that meets the hotel’s strict criteria on sustainable fishing and farming methods. This promotion kicks in perfectly in time for the celebration of Sustainable Gastronomy Day on 18 June 2017. We fully support this initiative and, of course, have experienced this sustainable seafood dining promotion at Scalini.
Scalini is the city of seafood – from now until end of September 2017
The concept of ‘Seafood in the city’ is to use the freshest sustainable local and imported seafood produce in creating seafood dishes. Guests can also select from American lobster, Fines De Claire oysters, Bouchot mussels, Manila clams, Thai blue swimming crabs, giant tiger prawns and slipper lobsters in a market-style environment in the weekly ‘Thank God, it’s Seafood Friday’ feast. The Chefs at Scalini will cook the selected seafood in the way the guests like. All you need to do is to tell how you would like your seafood to be cooked! It’s simple and easy.

Chilled Seafood Bucket
The chilled seafood bucket, designed for tables of two guests and more, includes Fines de Claire oysters, jumbo tiger prawns, bouchot mussels, white prawns, blue crabs, salmon ceviche, seaweed salad, served with chilli lime dressing, cocktail sauce, shallot vinegar and BBQ sauce. Freshness is the key for this kind of seafood bucket and Scalini’s Chefs mastered this key so well that it opened up my appetite. I especially like the oysters – fresh enough to just eat with a few drops of lemon juice.
Warm Lobster Carpaccio
Lobster carpaccio was made at its best. Topped with burrata cheese in Noilly Prat foam, Foie gras curls, botarga, black salt, imported edible flower, and caviar. Visually, this dish looked so much like an artistic picture but its taste was sophisticated.
Zuppa D’aragosta – Lobster morsels, tarragon cream and caviar
This is a lobster bisque flamed with VSOP Cognac made right beside the dining table by the chef. It’s, of course, the best Instagram moment of the whole night. The lobster bisque was flavoursome and aromatic! A plate-licking dish for me.
Chef Win’s Tiger Prawns Cannelloni
This cannelloni was unconventional and healthy. Instead of pasta, it’s made of zucchini wrapping of tiger prawn, blue crab meat from the south of Thailand and Siracha chilli espuma. The mouthfeel was fresh. The sauce did the magic to enhance flavours of the dish! It’s best to pair with a glass of bubbles or a white wine.

She is able to taste how the food is cooked and prepared. Besides, she is also a pro buffet gourmet because of her unlimited appetite. When she says ‘too sweet’, it may not be sweet for you as her preference for chocolate is 72++ dark chocolate.
