Grand Opera Thailand is set to perform a series of six performances at Vertigo TOO on the 60th floor of Banyan Tree Bangkok. This unprecedented event was kicked off with the performance of Les Miserables on Wednesday, 12 July 2017. At the invitation of Banyan Tree Bangkok, we have joined this very first performance by the Grand Opera Thailand. It was a beautiful artistic journey of arts and cuisine, combining the delights of gastronomic and acoustic pleasures in one night.
What is Grand Opera Thailand?
Grand Opera Thailand was founded in 2011 by the internationally-renowned opera singer, Stefan Paul Sanchez, to provide approachable opera to the public and raise the level of opera appreciation in Thailand. It is also a platform for young Thai opera singers to perform to audiences in the region, nurturing their development to becoming professional opera singers in future. These young opera singers are talented graduates of the best vocal faculties in Thailand. Success and diligence have brought Grand Opera Thailand on international stages including Myanmar, Bahrain, Bangalore, South Korea and Karachi. Their distinguished voice and stagecraft techniques in opera and musical theatre are commended and have been recognised both locally and overseas.
Grand Opera Thailand Event at Vertigo TOO, Banyan Tree Bangkok
Six performances will be performed by the young professional opera singers of the Grand Opera Thailand at the elegant Vertigo TOO under the canopy of starry lights. After the performance of Les Miserables on 12 July, subsequent events will feature world-class and internationally acclaimed musicals, including Chicago on 9 August; Phantom of the Opera on 6 September; La Traviata on 8 November; Pop-Opera featuring “Boogie Woogie” Boys & Girls on 6 December and an International Tribute to Valentine’s Day as the last show of the series on 14 February 2018. This event offers a once-in-a-blue-moon opportunity for an utter indulgence in gastronomy and acoustic opera performances.
4-course Wine Dinner on Les Miserables Night by Grand Opera Thailand
This 4-course Wine Dinner was gorgeous. While every nerve of mine was gracefully massaged by the alluring voices of the professional opera singers, the taste buds obviously followed the flow and experienced an elegant French cuisine with beautiful wine pairing that went perfectly hand-in-hand with the food. The wine dinner started with a welcome glass of Champagne, which was a smart choice to embark on our gastronomic and acoustic journey of the night.

The aromatic, floral wine was yellow with light golden highlights. It had a rich and explosive taste of exotic fruits, roses, and spices with aromas of ripe fruits. It also had a long finish that paired very well with the Foie-gras terrine. To enjoy this starter, smell the wine first before savouring a small bite of Foie gras. While the aftertaste of Foie gras still persists, take a sip of the wine. Let the aroma in the nostrils and the taste on the palate enjoy the playground of your senses of taste and smell.
Smoked Haddock Fish, Potato Fondant
It was a soup made of boiled and puréed potatoes, cream, and stock. This soup was served warm following the tradition of serving Vichyssoise in the middle of hot summer. The sweetness and mild saltiness of the smoked Haddock fish added an extra layer of flavour. I like the idea of putting the roasted potato fondants in the soup, it created an interesting texture to be enjoyed on the palate, further enhancing the taste of the soup.

This red wine had a brilliant ruby colour with flavours of red fruits and cherries. It was a balanced wine with a long finish, making it a good choice for the duck leg. The confit duck leg was flawless – crispy skin, moist and juicy meat, no gamey smell. It’s definitely a plate-licking dish.

The chosen Chardonnay was pale in colour. It had a mild, creamy aroma. The flavour was full and rich without the dominance of acidity. It had a creamy texture but at the same time mildly peppery. This wine further brought out the flavours of cod fish and white asparagus. Eating them together with the sautéed morel mushroom added a pleasant earthy touch to the overall taste.
Homemade Vanilla Ice-Cream

The charm of Moscato is that it goes well with any desserts. This Moscato was zingy, refreshing and very easy to drink. Its sweetness brought out the aroma of the apple tart. It literally left a sweet memory of not only the performance by the Grand Opera Thailand but also the enticing wine dinner brought by the Chef of Vertigo TOO.

The delight of the performance was that it wasn’t a standup show on the stage. Opera singers popped out everywhere in the dining venue, they also interacted with diners, singing and performing right in front of you. It’s extremely entertaining!
