Cucina’s Italian Chef Andrea Delzanno presents a limited-time menu showcasing the elegant simplicity of rich, hearty Tuscan cooking, from 18 March to 10 May.
Located in central Italy, Tuscany is known for its mouth-watering gastronomic traditions. Distinguished by mountains and coastline, Tuscan cuisine champions fresh, seasonal and simple ingredients. ‘A Taste of Tuscany at Cucina’ takes guests on an indulgent gastronomic journey to the heart of Italy, with rich dishes from around the region.
The “Panzanella” salad is a beloved summertime dish in Tuscany. Chef Andrea takes inspiration from this refreshing classic in his Lobster Salad, Tuscan Panzanella, and White Balsamic Vinegar(HK$308). Featuring a combination of toasted bread, diced tomatoes, onions and cucumber mixed with a complex White Balsamic vinegar, all topped with smooth, subtle flavours of lobster. Homemade Fettuccine with Stewed Wild Boar Ragù Black Truffle (HK$388) blends the rich taste of wild boar and delicate homemade fettuccine, enhanced by black truffle.
Slow Cooked Beef Short Ribs with Chianti Risotto and Mushrooms (HK$788) is highly recommended by Chef Andrea. Classic Tuscan cooking brings out the amazing natural flavour of short ribs, with Chef Andrea using regional Chianti wine to enhance the dish. It’s more than suitable for sharing.
Seafood Casserole in “Livornese Style” (HK$428) is another must-try. From the west Tuscan city of Livorno, the traditional broth is infused with cherry tomatoes and fish bones, before enhanced by such fresh seafood as prawns, clams, mussels, octopus, cuttlefish and scallop.
