Tatsumi Japanese Restaurant is one of the best Japanese restaurants serving an authentic, seasonal tasting menu featuring ingredients available during a particular season in Japan. The tasting menu, delicately crafted by Executive Chef Tanaka Shigeru, changes every three months to reflect the prevailing season in Japan.

When we visited Tatsumi in mid-October, it was autumn stepping into winter season in Japan. Chef Tanaka, hence, reflected such seasonal transition by serving us dishes from both the autumn menu and winter menu.

Seasonal Tasting Menu offers two options:

(1) 8-course tasting menu at THB 1,600 nett per person (food only) and THB 1,900 nett with sake pairing

(2) 5-course tasting menu at THB 900 nett per person (food only) and THB 1,200 nett with sake pairing

Dining Experience at Tatsumi

8-course seasonal tasting menu with sake pairing:

I. ZENSAI

Boiled Sweetened Ayu Fish
Sweet Potato and Lotus Root Chips
Squid and Capelin Row

The appetizer featured the freshest harvest from the sea and the most mature produces from the soil.

II. SOUP

Fish Cake with Chrysanthemum and Matsutake Mushroom

The tiny slice of citrus skin did magic to the fish cake, enhancing its flavour and the aroma. The use of matsutake mushroom and chrysanthemum are the autumn touch to the soup. It’s a nice hot soup!

III. SASHIMI

Bonito, Belly Tuna, Yellow Tail

Honestly, this sashimi is the crème de la crème of the autumn tasting menu. Fishes found during autumn, especially when it’s transiting to winter, are fatty and tasted at their best.

IV. YAKIMONO

Grilled Salmon in Sweet Kyoto-Style Miso

Japanese cuisine is all about simplicity. No complicated seasoning as the freshness of ingredient is the key. Bringing out the original flavour of the food is the principle of any Japanese chef. Chef Tanaka grilled this piece of salmon at its perfection. It wasn’t over-cooked, bursting of the sweetness of salmon was experienced.

V. NABE

Taraba Kani Nabe

This dish was from the winter tasting menu. It is, of course, one the most wanted enjoyment during the cold winter. Three elements are especially important when enjoying hot pot. (1) A hot, flavoursome soup base; (2) fresh ingredients which can thicken the flavour of the soup during the course of savouring hot pot; and (3) A group of friends. The bigger the group, the more fun there is.

VI. SUSHI

Salmon, Chutoro

A piece of tasty sushi is determined by how best the sushi rice is. The sushi made by Chef Tanaka was delicious. The amount of vinegar was used just right in the rice to keep its moist. The size of the two pieces of sushi was consistent.

VII. Rice

Rice in Masu Bowl Topped with Salmon Roe, Tuna, Sweet Shrimp

This rice bowl was served right after the sushi. The portion was about right, especially after considering the preceding sushi course. The star of this course is the sweet shrimp! Fresh and natural sweetness added a touch of ocean flavour to the rice!

VIII. DESSERT

Rice Powder Dumpling and Almond Jelly with Strawberry and Red Bean

Chef Tanaka brought us back to the autumn menu when it came to dessert. But I am glad that he did it! This dessert is a traditional Japanese dessert featuring bouncy rice powder dumpling. To make it bouncy, there required a lot of work – kneading again and again! The red bean paste was classic. It literally gave the almond jelly a fresh sweet touch.

Sake Pairing

Highly recommend you all try the tasting menu with sake pairing. It’s an experience of Japanese culture. The selection of sake was careful. Distinctive aroma and taste were experienced.
